5 Stupid Simple Recipes for Garlic Lovers

1. Cheesy Garlic Shrimp Alfredo

How long it'll take: 30 minutes

What you'll need:

2 c 2% milk

4 oz cream cheese

2 tbsp. flour

½ tsp. salt

3 tbsp. butter

3 tbsp. minced garlic

1 c grated Mozzarella cheese or 3 cheese blend

⅓ c parmesan cheese (optional)

pepper to taste

1 lb peeled and deveined shrimp

parsley to garnish

What to do:

Using a hand mixer or blender, mix together the milk, cream cheese, flour, and salt until smooth, set aside.

In a saucepan, melt butter and add garlic. Sauté garlic for about a minute, then add in peeled and deveined shrimp. Cook 3-5 minutes, until pink, and just barely cooked through Remove shrimp from pan, leave garlic and butter drippings in saucepan

Add milk mixture to the pan, and stir for 4 minutes on medium heat. Bring to a simmer, and keep stirring for about 6 more minutes until is starts to thicken.

Remove from heat, add grated cheese and Parmesan. Cover, let stand for about 5 minutes. Add shrimp into sauce and let stand another 5 minutes. Serve over noodles of choice (1 lb package is sufficient). Garnish with some dried parsley

2. Lemon Garlic Chicken Drumettes

How long it'll take: 30 minutes

What you'll need:

Kosher salt

freshly cracked pepper

10-16 skin-on chicken drumsticks

1 tbsp. olive oil

4 tbsp. butter

3 garlic cloves, finely chopped

zest of 1 lemon, plus 1 tbsp. lemon juice

2 tbsp. parsley, chopped

What to do:

Generously season the drumsticks with salt and pepper, and let sit at room temperature for 30 minutes, time permitting. Pat the drumsticks dry with paper towels just before cooking.

Heat a 12-inch, heavy-bottomed skillet (preferably not nonstick) over medium-high heat. If you don't have a large enough skillet, use two smaller skillets. Add the oil and half the butter. When the butter is foaming, brown the drumsticks on all sides in batches; transfer the browned drumsticks to a plate.

Reduce the heat to medium-low, add all the drumsticks back to the skillet(s), cover with the lid, and cook for 20-25 minutes, rearranging the drumsticks every 5-10 minutes for even cooking. Remove the lid and add the remaining butter, garlic, lemon zest, and lemon juice. Gently toss to coat the drumsticks. Take the skillet off the heat and leave the flavors to infuse for a few minutes (this also allows the chicken to rest). Sprinkle with parsley, and serve hot.

3. 15-Minute Garlic Scallops

How long it'll take: 15 minutes

What you'll need:

1 lb natural and untreated scallops

1 tablespoon olive oil

2 tbsp. melted butter

3 cloves garlic, minced

1/4 c white wine

pinch of cayenne pepper

pinch of salt

3 dashes ground black pepper

1 tbsp. chopped Italian parsley leaves

What to do:

Rinse the scallops with cold water and remove the tough ligament from the side of the scallops. Pat dry with paper towels.

Heat up a skillet (cast-iron preferred) on medium to high heat. When it’s fully heated, add the olive oil and butter. Sauté the garlic for a little bit and add the scallops, pan-sear until both surfaces turn brown. Add the white wine, cayenne pepper, salt and black pepper. Bring it to a light simmer or until the inside of the scallops are cooked through. Turn off heat and serve immediately.

4. Roasted Garlic and Brie Pull-Apart Bread Boule

How long it'll take: 1 hour

What you'll need:

1 large sourdough boule

1 bulb garlic

8 tbsp. butter, divided

1 tsp. lemon juice

kosher salt

8 oz double creme brie cheese, rind removed

2 tbsp. chopped fresh parsley

What to do:

Preheat oven to 400 degrees. Cut 1/4 inch off the top of the bulb of garlic to expose the cloves beneath, but do not peel the garlic, you want to roast it in the skin. Place clove on a piece of aluminum foil, place 1 tablespoon butter on top, pour lemon juice over the garlic and sprinkle with kosher salt. Bring up all sides of aluminum foil and twist together to close. Cook for 45 minutes or until garlic cloves are soft and golden in color. Allow to cool. Remove cloves with a fork. Reduce oven temperature to 350 degrees.

Slice the bread vertically and horizontally being careful to not cut all the way through the bread, stop about 1/4 inch from the bottom of the loaf. Place on a sheet of aluminum foil.

Melt the remaining 7 tablespoons of butter with roasted garlic cloves in a saucepan over medium-low heat. Pour melted butter over the top of the sliced sourdough, gently parting the bread to make sure the butter works its way in to all the little spaces. Press diced brie into the cuts of the bread. Wrap the bread in aluminum foil and bake for 15 minutes. Uncover and bake for 10 more minutes.

Turn on the broiler and broil for 2 minutes or until the cheese is bubbly. Remove from oven, sprinkle parsley on top. Serve.

5. Roasted Garlic Bulb

How long it'll take: 45 minutes

What you'll need:

aluminum foil, one piece per bulb

large garlic bulbs

2 tbsp. olive oil per bulb

What to do:

Remove the outer layer of the garlic bulb, to expose the cloves in their individual shells. Cut of about 1/4″ of the top of the bulb. Place garlic bulbs in the prepared aluminum foil squares and place on a baking sheet. 

Drizzle about 2 teaspoons of olive oil on each bulb. Bring the edges of the foil together and close the bulb inside. Place baking sheet in a oven preheated to 400F degrees. Roast for 30 to 35 minutes or until the cloves are soft. Remove sheet from the oven and let the foil packets cool until safe to the touch. Remove bulbs from the foil, you can then easily pop out each clove with a butter knife or fork.
